About the Role
KEY PERFORMANCE AREAS:
Position would be responsible for two restaurants, outdoor venues, and all function facilities, which include
conference facilities, function facilities & outdoor wedding venue.
Good financial acumen required for controls, budgeting & procurement requirements.
Able to draft staff rosters and staff registers.
Manage labour relations as required. Manage large
staff complement.
Responsible for the preparation, cooking and presentation of all food items in accordance with laid down minimum standards as required by the company for a 4* Luxury Lodge
Must be prepared to work in remote area, including adaptability required in such an environment
Requirements
QUALIFICATIONS:
Microsoft Office, especially with Good Excel Skills
Menu planning as required.
High communication skills in English - verbal and written
Proven track record within a luxury hotel/lodge environment
Valid RSA ID is required
Own transport required to & from work.
Valid Driver’s Licence required
Matric
Further tertiary culinary qualifications
EXPERIENCE:
Stable track record. least 3-5 years’ chef experience at 4/5* Hotel or Lodge (100+ rooms)
Manage kitchen as a business unit
Management reporting required.
Management of Food – FIFO.
